Today I'm going to talk about eggs. Bernard Jensen calls eggs 'the perfect protein'. The story of high cholesterol in eggs is this. Eggs are high in cholesterol but what food contains the highest amount of lecithin? The egg yoke. The lecithin in the yoke breaks down and dissolves the cholesterol to balance it in the bloodstream. If you fry eggs, you ruin the lecithin but if you fry anything, you ruin the lecithin leaving only the cholesterol. So a slowly boiled egg is your best bet. Then you maintain that balance and you are eating a healthy egg and getting a great source of protein (approx. 6 grams).
Also, your little egg is packed with iron, vitamins - good for your heart and your immune system! Each egg is about 70 to 80 calories, depending on the size. So low in calories and high in the good stuff - a great friend and not just at breakfast time. I know people who take cold boiled eggs to work and eat them for a snack. Just try and be subtle and eat it quickly - cold boiled eggs give off a certain odor...
Now what kind of eggs to buy: there are so many varieties to choose from. I have tried the Omega 3 eggs and they taste like fish to me. Yuck!! But if you like fish and eggs, you might enjoy these. I usually buy the organic free-range. They are a little pricier but I don't buy a lot of meat so this works for me. White and brown eggs have the same health benefits. The only reason they are different colors is because they are from different chickens.
So, boiled eggs for breakfast, a nice big omelette for supper loaded with veggies and cheese, an egg for your afternoon snack. Try to work eggs into your diet. They're healthy little guys and give you a good energy hit as well!
